Author(s)Mintz, Sidney W.
AbstractPart of a larger examination of the evolution of sugar as a crop and food, this chapter examines the social and economic power associated with sugar consumption and production. It is argued that the mass consumption of sugar that developed in 17th century England served as a source of power for producers of sugar.
