Sugar and Strife: Europe and the Evolution of the Caribbean Sugar Industry

AbstractThe chapter provides the historical account of the relationship between sugar, the Caribbean islands and Britain. The development of “sweet tooth” for which the British are renowned was entirely dependent upon the establishment of sugar production in the islands of the Caribbean islands, and the chapter explores how, in both, economically and socially, the history of the sugar islands has been intimately connected with that of European development. Over the course of three centuries the discussion takes in the development of mercantilism and capitalism, and the relationship between global political economy and the plantations of Jamaica and the other islands.
